Forget Everything You Know About Food: Philips Has Redesigned It


Yesterday, I wrote about the Electrolux Design Lab concept for 2050, Heart of the Home.  To give you an idea of how out there Heart of the Home is (and I mean that lovingly), the kitchen's pots and pans are traced into existence with an index finger on the "stove", and they don't need to be washed or stored, just erased! 

Now, wait until you see what Philips Design has cooked up for 2050!  Or, thereabouts...

It's Multi-sensorial Gastronomy, and the Philips Design Probe program developed it with the expertise of Spanish restaurateurs Juan Mari Arzak and Elena Arzak, of the famous Arzak restaurant San Sebastian, Spain.  The father and daughter chefs are pioneers in molecular gastronomy, a cooking method that creates new experiences in the cerebral and sensorial interpretation of food.

What the Philips/Arzak team created were three extraordinary serving dishes - multi-sensorial bone china - that, together with three Arzak culinary gastronomies, create unbelievably brilliant and evocative happenings as they fuse.  And you don't know where the food ends and the dish begins..., It's all one experience.  

In this next group of photos, you can better experience the multi-sensorial aspects of this gastronomy, as you watch the dish unfold.  This is called Totem and Taboo of Foie...

Quite a story line in that dish...

This glimpse of future gastronomic fare may have come just at the right time. I'm getting kind of tired of the recipes from my grandmother's cookbook,  The Way To A Man's Heart ...
